He could be strong in the dark world? Or he’s faking the sickness. I don’t really support the theory, this is just really easy to disprove and also I’m curious how this will play out

Clearly dess had been starved in the light world prior to becoming the knight

This was never implied. People asserted that it's true back in the Chapter 2 days to disprove Kris-Knight, but it was never implied. I was, and still is, implied that the library Dark World was created at around the same time that the Internet went down.

He's not bedbound, he attends church in Chapter 4. In the Undertale Alarm Clock, Asgore talks about Undertale's Rudy and how he lived a long life, with no mention of any disease. His illness is probably not terminal, and even if it is terminal, it's not natural. He got it from doing something (perhaps by Knighting around). Maybe his condition is too bad to open a fountain, or maybe he's just talking it easy after opening so many fountains.

Or maybe he got it from opening fountains?

It's a disapproval but not a disproval

Haven't really taken a side on the Knight's identity but the illness could totally be caused by him opening the Dark Fountains.
