My personal opinion on this is that Dess' consciousness is stuck in the code (that's why she views herself just as a collection of memories) while the body got stretched and morphed using Gaster bs and is being piloted by someone else. Oh, and a small fragment of her consciousness still remains as that explains the Knight's aurafarming and behaving as something more than just a puppet. I think that everything aligns great. But honestly I don't really care about the Knight's identity, as long as the reveal is cool and shocking.

Serious answer: The whole thing with Dess is that she's trapped in the code. For her to also be the knight there needs lots of convoluted contraptions that don't really match up, like the darkness-piloted body theory which forgets that only a lightner can open a Dark Fountain, and a souless corpse piloted by darkness wouldn't count as a lightner.
Funny answer: Because Dess isn't Papyrus
