I don’t think anyone ignores it; it would just be very bad writing if the antlers were purely ornamental decorations and all the allusions to them being Dess were red herrings.
We honestly can't even be too sure if there is anything underneath that helmet. The Knight is an amorphous void creature.
While searching for the solution to the organ piano puzzle, Susie is separated from the party, and Ralsei suggests Kris closes their eyes and think about what Susie is doing. If the player refuses twice, Ralsei suggests that Kris closes their eyes in general, and the player is given the option to think of the Knight instead. This causes Kris to visualize the Knight taking off their helmet. However, Kris immediately begins thinking of Jockington instead before opening their eyes, preventing the player from learning the Knight's identity.
TL;DR, if you think of the Knight instead of Susie, we see them start to take their helmet off, and Kris thinks of Jockington so as to not let us see the Knight's face.
All of yall hating on Papyrus Knight when there’s actually some valid evidence for it.
And before you say “Papyrus doesn’t want to hurt anyone!” We don’t know the complete personality of this universe’s Papyrus. Heck, the fact that we haven’t seen his face should be enough to say that this Papyrus is already quite different. In Undertale, Papyrus was always out about, trying to be seen as cool. Even in the True Pacifist Ending he’s driving a car with his arms-crossed, trying to be cool. Heck, that last part actually helps Papyrus Knight, as from what we can see from how the Knight acts, it’s safe to say they have quite the ego.
In Deltarune? Assuming that Sans’ brother is actually Papyrus, we haven’t seen them once, with only a trousle of bones from the house. Also, you know how after you leave church the trousle of bones isn’t there? The Knight as we know is preparing to make Dark Fountain at that time. Of course there’d be no trousle.
@MarkKrutak How does this man fake an illness,escape the hospital without anyone noticing, and OPEN A WHOLE ASS DARK FOUNTAIN? And if he's not faking an illsans, how is he opening these things, and PROCEED TO AURA FARM ON TWO TEENAGERS, PLUS A GOAT BOY?! It doesn't entirely make sense.
Alvin: The church dark fountains are clearly opened by someone devout. Also, considering monster dust can only be brought back by someone with strong memories of a person, it could be Alvin. However...
Asriel: Both of my reasons for Alvin knight would likely apply to Asriel. It's likely that Asriel grew up with gerson as a mentor, and he very clearly is quite devout. Kris working with the knight would make sense — they would trust their brother. And it connects with Dess being missing — they were at least good friends, and the community as a whole has near universally accepted Dessriel without us even knowing much about them. And again, how convenient for the wifi to go out right when all this goes down.
I still personally think it's Dess, also one detail I saw someone point out that stuck with me is the fact that in Dess room there is a left handed mouse, and the knight holds its blade with a left hand, also story wise it would make for a cool twist.
Also I like the idea of Dess being reincarnated as a darkner, but wouldn't that mean that if roaring knight is a darkner they wouldn't have been able to leave the house and run into the bunker with ought turning into an object in the light world or something though?
@RykerNightshard Maybe the “illness” isn't in fact a regular illness: what if whenever he turns into the knight (if he can do this somehow) he gets strong and stuff temporarily but his condition worsens when he returns to his normal self? His motive can be the same a carol's: to somehow find dess by opening dark fountains (the knight clearly opens them strategically, it's not like they just want to begin the roaring")
About him escaping: maybe he's alone most of the time? Like that teeth receptionist doesn't seem to mention him so maybe everyone just thinks he constantly needs to rest and rarely walks in?

I honestly think that roary nyte is a special type of darkner, actually not a darkner nor a lightner at all. Notice how are they similar to the titan in style and visually? If titans can exist in the light world (Ralsei’s explanation of the roaring), why can't the knight? (While also keeping their appearance and abilities)
