Carol has a katana, a literal katana. Their horns are also remarkably similar to the KNIGHT's, and they have connections via the mysterious caller, and therefore are a strong canidate for the KNIGHT.
Dess has been missing, which can be taken for evidence that either she can't be the KNIGHT, meaning that people would notice her if they saw a missing person, but it could also mean that this is what happened when they were missing. Some say the KNIGHT's sword also resembles a bat, which would indicate a similarity with Dess, who is known to be associated with a bat.
Papyrus KNIGHT theory sucks, and their evidence is mainly in the KNIGHT's body shape and the fact that Papyrus is yet to be seen. Somehow, they still have a large supporting fanbase, which is quite worrying.
Amalgam KNIGHT theory states that they may be an amaglation of various people, amalgates noticably being absent from DELTARUNE so far. The KNIGHT also has been identified as many different things, so this seems partially the result of negotiation between different theorist's camps, and has some plausibility.
Frame the Holidays theory states that the large and obvious evidence for both Carol and Dess is planted there by the true KNIGHT, an ally, or perhaps Toby Fox himself, to make them either a Red herring or to just frame them outright.
Gaster KNIGHT and Kris KNIGHT are both mostly defunct, as far as I know.
