I believe the seven suns arent just refering to the 7 flowers, but rather embody the flower's botanical lights.
after closing the dark world (in the Flower King's backroom), there are 7 colored lights visible above the cloches, which i believe are what the suns actually are.
this also matches with the suns having different colors.
