Dess is probably the Knight, but other people Have been creating Fountains.
Kris made one, we all saw it.
I believe that Alvin made the original fountains in the Church, since he was planning to do something with Gerson’s hammer, which was in his urn.
Essentially, I think Dess is the knight, but other people are acting as the Knight, probably to get certain things out of the Dark Worlds.

Dess is literally missing. Watching a missing person run across town, or even be present in a school, library, house, and a church is super suspicious. Noelle, of all people, would NOT just think it's suspicious. We know how she reacts to anything that even reminds her of her sister.

There's many NPCS all across Hometown. Dess coming out of the Bunker wouldn't let her sneak around. Not mentioning the people inside the library, church, and school. (Not mentioning the house because WE LITERALLY FUCKING SAW THE KNIGHT, they get spotted.)
