I don't think it's canon because of how it nerfs Flowey. Was the change necessary to make a game with Flowey in it? Yeah. But his entire schtick in Undertale is being a "fellow player", someone who's tried every possible option before. In Undertale Yellow, he doesn't do anything to shake up repeat playthroughs; in fact, he deliberately avoids interference. And then he gets mad at how often that gets the same result! If Flowey wanted different results, he should have done different things, rather than counting on Clover to wise up despite apparently being memory wiped most of the time.
If Flowey could save over you in Undertale, I guarantee he wouldn't behave like Yellow!Flowey.
Also, it is very strongly implied Flowey didn’t meet any of the humans before Frisk (and the first thing Flowey tried with Frisk is to take their soul, and that he couldn’t get any of the six souls…)
Toriel also feeling like she’s met the humans before implies they had the ability to save and load. So a canon UTY wouldn’t have Flowey at all.
Also the spare names would be pink
(Similarly, in a sequel to Undertale, spare names would be green. Bonus points to whoever can say exactly how we know that.)
