I just have realized now that the Knight can't be anything but a Dragon.
It's the "Roaring" Knight. Only Dragons roar. It's not a deer nor a goat.
The only thing besides Dragon that can roar is Friend. Because he has Dragon's mouth, a Gaster Blaster like smile with big teeth.
Battat tells us that "THESE TEETH, THEY BITE!" which is a reference to how Susie (a dragon) tries to bite Kris in Chapter 1. It is indeed a Dragon's mouth
Thus, Roaring Knight can't be anyone but Friend. But it is interesting how Knight's mouth is obscured, that we can't see it's teeth.
Or you could say that the Knight is Gaster. But it would be bad writing.

This is really just an addendum to everything else, although I remember it's believed that Dragons roar? If the Angel is Gaster, who is a Dragon then it could explain why the Roaring is connected to the crying eyes of The Angel. Friend having Dragon's mouth is explained by what I have said before: the balance of elements in the DELTARUNE is broken, and Friend clearly possesses both traits of Light and Dark at the same time, for example he is a Cat (Puppet) however he is the one pulling the strings, has the pink n yellow yin-yang eyes, etc. + the already discussed Dragon mouth.
