SPOILERS FOR CHAPTER 3 AND 4
Yes, I've played a lot of Chapter 3 and 4. Snowgrave continuation included. The Roaring Knight clearly has antlers in the design, leading most to the assumption of The Roaring Knight being one of the Holidays. They use a sword that looks awfully similar to a Katana, and Noelle mentions her mom owns a Katana since "normal knives aren't enough for" her "dad's fruitcake". (Her isn't in quotation since Noelle doesn't speak in the 3rd person) This leads me to think Carol is The Knight... But then I think about it more. Sure, there's the evidence of Alphys saying that The Mayor (Carol) and Undyne went to the shelter, but if it's a Holiday as The Knight... Alphys might be confusing them for The Mayor. It's dark. The Holidays do look pretty similar. They're running and therefore hard to get a clear sight of. This theory works, but what if The Mayor is actually an accomplice to The Knight? Kris is an accomplice. Why can't there be more? Assuming it's a Holiday, they would know Carol. Carol might be helping them for whatever plans they have. Gonna bring this up too: Rudy in Chapter 1 coughs one time both after and before every interaction. (I tested so I can confirm, can't confirm Chapter 4 though haven't beaten it) Before and after every interaction in Chapter 2 he coughs 2 times. Perhaps his sickness is just getting worse, that's a theory for sure. But I'm thinking out of the box. I'm thinking what crazy plot twists Toby could pull. What if after every opening of a Dark Fountain, Rudy (aka The Knight for the context of this theory) loses some of his strength? His will, as Queen says. (Referring to Queen talking about using Noelle [or any Lightner really] to open a Dark Fountain) Rudy opens Dark World's to cure his illness. The Knight clearly isn't sick nor coughing. Dark World's make him stronger, but opening it weakens him. I use Kris as evidence. They open a Dark Fountain in Chapter 3, and after finally having the SOUL back in Kris during Chapter 4 (non-Snowgrave continuation), they appear to trip or stumble for a bit. I think they're weaker from opening a Dark World. They could be weaker from taking out their SOUL so much (evidenced by Snowgrave continuation Noelle), but for the Rudy is the Knight believers, I shall ignore this for now. Rudy is part of the choir in the church. You know who was in the choir? Catti, some other male cat I forgot the name of, Toriel, Alvin, I think Gerson, (but keep in mind I have done little to nothing in Chapter 4.) Noelle, and... Rudy. Noelle's getting yelled at by Carol or something making her out of the question. (Haven't tested entering the hospital when you're supposed to get Toriel, so theory might be broken already.) This does lead me to another theory though. What if The Knight is a Darkner? Kris and literally any other accomplice you can think of could be opening the fountains for them. This explains why they don't stay in the Dark Worlds for very long, as they might turn to stone. But in the chance they are like Ralsei and don't... The Roaring wouldn't turn them to stone. It would rid the world of Lightners and Darkners. Perhaps these are the intentions of a Darkner Knight?
Darkner Knight is just… wrong, since they take Undyne to the shelter.
And Rudy Knight, it’s possible I guess, but I highly doubt it.
For me, the most likely candidate is either Dess or Carol, but I think Dess.
Have you considered perhaps that Undyne may have ran to the shelter with her own legs?
We know from Napstablook she knew one of the codes to the shelter, and that it was one of the only things that made her nervous. It's not unthinkable that when she got out of the Dreemur residence holding something (be it Dess's remains or something else), she knew in that moment that she had to return it as fast as possible.
Why would she take it to the shelter then?
And not to mention the phone call that mentions a police sacrifice
We're talking possibilities here. It's possible she knew it belonged in the shelter (because she is one of the people who goes there), and she doesn't have to know about the police sacrifice.
Okay but why would Phone Guy be mentioning a police sacrifice when Undyne is there of her own accord
It just makes more sense that you would see “undyne got kidnapped and taken to the shelter” and “police sacrifice” and would then connect the two.
Anything else is just kinda convoluted for no reason
Uh... Undyne was definitively still kidnapped. She's not staying there of her own accord, whether she went there herself or not.
So you’re saying that Undyne found something that becomes the knight in a dark world and took it to the shelter for whatever reason and Whatever’s inside (maybe the funny wing dings man) got her

Well what if Toriel had been mind controlled? The Knight might have been mind controlling Toriel as opposed to using her power or anything like that. The Knight might have mind controlled Toriel into opening a Dark Fountain. Perhaps like Ralsei, The Knight can go into the new Dark World without trouble. Feeling a dark presence and hurrying over... Or they were brought in by Toriel assuming she was brainwashed. I know it's a stretch and I haven't beaten Chapter 4 or fought the Secret Boss, but it's plausible from what I've played of the new chapters.

Yeah, but did anything explicitly state mind control isn't possible?

I'm not saying it definitely happened. I'm saying it's a possibility. And not even a crazy one as you seem to believe.
We know Undyne is one of the few people who goes to the shelter. She knows something about what's inside and that it is one of the only things that makes her nervous. It's not hard to imagine that it is something related to the Knight, and how it should be kept in the shelter.
No, not "funny wing dings man". The Knight itself could do the job just fine once it entered a Dark World again.

The thing I don't like about both Papyrus Knight and Rudy Knight is the why, a twist like that would come completely out of nowhere for the sake of a cheap hahaha bet you didn't expect that. Which I feel Toby is a better writer then that. Dess has been haunting the story since chapter 2, her absence being always a factor but never the why. Representing that toxic nostalgic feeling between the Dreemurrs and the Holidays, that dream for everything to go back to normal, how it was when they were kids. I think Dess's desire to go back to then, either physically if this disaster we hear about horribly messed her up in some way or maybe in some other way like emotionally. Is eventually manifested in the Dark World taking over who Dess is, instead of Dess playing as The Knight she becomes just, The Knight.
