(Note: No, you CAN'T bomb my post with that one face of Asgore, I've been tired of seeing that face as the only face fans bother to talk about instead of his complex lore. (Specifically that face in the meme Asgore Runs Over Dess, which I don't like that meme because of the reason(s?) above.)

I mean, the original line from the prophecy is "THE QUEEN'S CHARIOT CANNOT BE STOPPED" and shows a picture of the car you drive in chapter 2 (which does get stopped like three times but whatever). People just edited it for the truck meme.

Is there any reason the Asgore Runs Over Dess meme couldn't be canon?

Correct. Additionally, there's the likely inference that Asgore has become obsessed with looking for Dess - his obsession (with whatever the corkboard in his shop is about) focuses on the Holiday home, and there's only one mystery there (along with a second corkboard).

If December were dead, especially if he'd been involved, there'd be no way he'd want to be at their house, no way that Carol would welcome him there (let alone pay him to be there), no way that he and Rudy would still be so close without any sign of pain or resentment on Rudy's part, and absolutely no way Noelle would be in the same room as him.

(I'd add there'd be no way he'd feel comfortable eating their snack tray either, but he actually is that socially oblivious. And broke.)

And the other adults wouldn't talk about his obsession in even the guarded way they do at church if the situation was "hey the guy who killed my daughter is in a dangerous level of denial and also sending me flowers". It just reads more like conspiracy nut than murderer.

You're right - it's not King Asgore. It's actually an unseen character associated with the Weird Route, only referred to so far as "some king of snowgrave".

(This is a joke. As Cherman said, the real line is about a queen, not king.)
